Okay, lets just get this out there, I love to cook, and equally love to make things for people. I love the satisfaction of tasting something so yummy and knowing, “I made dis” and sharing it with my family and friends.
As much as we try to eat well, we are still transitioning out of our garbage eating habits. Change takes time. Sometimes when you want something yummy, or a treat, why not search for wholesome ingredients, the good stuff; non GMO, when possible?
When looking for an organic cookie recipe, I didn’t find any that looked good. So I took a standard sugar cookie recipe and made some modifications and made it my own. If you’re looking for a soft, delicious cookie with no guilt ridden thoughts of “why did I just eat that GMO, processed flour, chemically laden cookie” – give this one a try!

Here is the recipe:
INGREDIENTS
1 cup butter (I like the Kerrygold butter, but any organic butter works)
1 cup of Morena Pure Cane Sugar
1 farm fresh egg
1 teaspoon of vanilla (can’t beat that Mexican vanilla)
1/2 teaspoon of almond extract (this really does make the difference, don’t skip it!)
2 Tablespoons of milk
3 cups of Organic unbleached all-purpose flour
1 1/2 teaspoons of baking powder
1/2 teaspoon of salt
Instructions
In a large mixing bowl, cream butter and sugar
Add egg, vanilla and almond extract and mix well
Add milk and beat again
Add flour, baking powder, and salt
Chill dough for about 30 min to an hour
Preheat oven to 350 degrees
Roll dough about ¼ ” thick onto a lightly floured surface
Use a cookie cutter to cut out cookies, if you don’t have a round one, use a mason jar or a glass …or if you don’t have anything round, roll the dough up in a ball and set it on the sheet, then press it down with a drinking glass, so it flattens out.
Bake at 350 degrees F for 9 to 12 minutes – less for chewy, longer for crispy (I suggest the softer)
Frosting ingredients
2 sticks (1 cup) of butter
1 ½ teaspoon of vanilla
4 cups of powdered sugar (I haven’t found organic powdered sugar yet)
5 – 6 tablespoons of whole milk or half and half
food coloring if desired, fresh fruit slices and powdered sugar sprinkled on top for gorgeous cookies!
Blend ingredients together
Frost cooled cookies
Enjoy!
